Spanish wine and at least two years of barrel aging give this vinegar its complex, woodsy taste. It’s selected by the esteemed French brand Pommery®, which imports the vinegar from Jerez de la Frontera, part of Spain’s “Sherry Triangle,” and bottles it in stoneware that preserves its integrity.
